- 1 1/2 c. flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 c. margarine
- 1 egg
- 3/4 c. sour cream
- 1/4 c. milk
- 2 Tbsp. lemon juice
- 2 Tbsp. sugar
- 2 tsp. lemon zest
Directions

1Heat oven to 400°.

2Mix flour, baking powder and baking soda in a large bowl.

3Cut in margarine until mixture resembles coarse crumbs.

4Make a well in center of mixture.

5Beat eggs in small bowl; add sour cream and milk.

6Stir in lemon juice, sugar and lemon zest.

7Add to flour mixture, mixing just until moistened. Spoon into greased muffin pan, filling each cup 2/3 full.

8Bake for 15 minutes, or until lightly browned.
