- 1 12 cups sugar
- 3 eggs
- 2 14 cups flour
- 14 teaspoon salt
- 14 teaspoon baking soda
- 34 cup buttermilk
- 1 fresh lemon rind
- 34 cup chopped nuts (optional)
Directions

1Preheat oven to 350*.

2Cream butter & sugar.

3Beat in eggs, add remaining ingredients but use rind of lemon only.

4Put in greased loaf pan or muffin pans.

5(Loaf takes about an hour- mini muffins about 20 minutes, regular muffins about 25-30 min.

7For glaze: Juice of lemon, 1/2 cup sugar- poke holes and pour over top of baked muffins.
