  • 34 cup butter
  • 1 12 cups sugar
  • 3 eggs
  • 2 14 cups flour
  • 14 teaspoon salt
  • 14 teaspoon baking soda
  • 34 cup buttermilk
  • 1 fresh lemon rind
  • 34 cup chopped nuts (optional)

Directions

    Preheat oven to 350*.

    Cream butter & sugar.

    Beat in eggs, add remaining ingredients but use rind of lemon only.

    Put in greased loaf pan or muffin pans.

    (Loaf takes about an hour- mini muffins about 20 minutes, regular muffins about 25-30 min.

    For glaze: Juice of lemon, 1/2 cup sugar- poke holes and pour over top of baked muffins.
