- 3/4 c. margarine
- 1 1/4 c. sugar
- 3 eggs
- 2 1/2 c. flour
- 2 tsp. baking powder
- 1 tsp. salt
- 1/2 c. milk
- 1/3 c. lemon juice
- 3/4 c. chopped pecans
- 2 tsp. grated lemon rind
Directions

1Cream margarine and sugar until light and fluffy.

2Blend in eggs.

3Add combined dry ingredients to creamed mixture alternately with milk and juice, mixing well after each addition.

4Stir in nuts and rind.

5Pour into greased and floured 9 x 5-inch loaf pan. Bake at 350° for 1 hour and 20 minutes.

6Cool 5 minutes.

7Remove from pan.
