  • 1 qt. pecan halves
  • 1/2 lb. candied cherries
  • 1/2 lb. candied pineapple
  • 2 c. flour
  • 1 lb. butter
  • 2 c. sugar
  • pinch of salt
  • 6 eggs
  • 2 c. flour
  • 1 1/2 oz. lemon extract

Directions

    Mix together pecans, cherries, pineapple and flour; set aside.

    Cream together butter, sugar and salt. Add eggs, one at a time. Add flour and lemon extract. Add the nut and fruit mixture. Pour in greased and floured tube pan. Bake 2 hours at 300°.
