  • 1 lb. butter
  • 2 c. sugar
  • 6 eggs, separated
  • 1 oz. lemon extract
  • 1 tsp. baking soda, dissolved in 1 tsp. warm water
  • 5 c. all-purpose flour (hold back 1 c. for nuts)
  • 4 c. nuts, chopped
  • 1 box golden raisins

    Cream butter and sugar until light and fluffy.

    Add egg yolks, one at a time.

    Add dissolved soda and flavoring, along with 4 cups of flour.

    Blend well.

    Stir in nuts and raisins, mixed with the reserved cup of flour.

    Beat egg whites until stiff; add to the batter-nut mix.

    Mix well.

    Pour into tube pan.

    Bake at 275° to 300° for 2 hours, until done.
