- 1 Tbsp. extra virgin olive oil
- 2 Tbsp. chopped parsley
- 1 tsp. grated fresh lemon peel (none of the white pith beneath)
- 1/2 tsp. freshly ground black pepper
- 3/4 c. chicken stock
- 2 Tbsp. fresh lemon juice
- 2 tsp. cornstarch
- Parmesan cheese, grated
- 8 oz. linguine
Directions

1Combine oil, parsley, lemon peel and pepper in saucepan.

2Heat gently. Combine stock, lemon juice and cornstarch and add to oil mixture, cooking until slightly thickened. Add pasta which has been cooked to al dente.

3Transfer all the pasta and sauce to a warm serving bowl. Add grated cheese.

4Toss until well mixed. Serve at once with additional grated cheese, if desired. Serves 4 as appetizer.
