Lemon Pecan Cake

- 4 c. flour, divided
- 1 lb. butter, softened
- 2 c. sugar
- 6 eggs
- 1 small bottle red cherries, cut up
- 1 1/2 c. chopped pecans
- 1 oz. pure lemon extract
Directions

1Dredge pecans and cherries in a cup of flour.

2In a mixing bowl, cream butter and sugar until fluffy.

3Add eggs, one at a time, beating well.

4Add remaining flour and lemon extract, beating until smooth.

5Fold in cherries and nuts.

6Pour into a well-greased and floured tube pan and bake at 250° for one hour. Test to see if done.
