Lemon Pecan Cake

  • 3/4 lb. butter
  • 1 lb. sugar (2 1/4 c.)
  • 1 lb. flour (4 c.)
  • 6 eggs, beaten
  • 1 tsp. baking powder
  • 1 box white raisins
  • 1 lb. chopped pecans (4 c.)
  • 3 oz. lemon extract

Directions

    Dust raisins and nuts with little flour.

    Cream butter and sugar.
  3. 3
    Add beaten eggs a little at a time.

    Add alternately lemon extract, flour, nuts and raisins.

    Cook at 325° for 1 1/4 hours. You can make a large cake or in loaves.

    I like to make this at Christmas.
