- 2 large eggs
- 3 large egg yolks
- 3/4 c. sugar
- 1/2 c. lemon juice
- 1 Tbsp. lemon rind
- 1/2 pt. heavy cream
- 1 pkg. unflavored gelatin
- 1/4 c. water
- baked pie shell
Directions

1Whisk first 5 ingredients in saucepan.

2Cook, stirring constantly, 10 minutes.

3Heat gelatin and water over low heat until gelatin dissolves.

4Stir into cooled lemon mix.

5Whip heavy cream and fold into mixture.

6Pour into baked pie shell and refrigerate.

7Decorate with crystallized pansies.
