- 1 c. sugar
- 6 Tbsp. cornstarch or flour
- 1 1/2 c. water
- 3 beaten egg yolks
- 2 Tbsp. butter
- 1/3 c. lemon juice
- 2 tsp. grated rind
Directions

1Mix sugar, cornstarch and egg yolks in heavy saucepan.

2Stir in water gradually.

3Cook over low heat, stirring constantly until mixture thickens.

4Grate the two lemons.

5Stir in rind and juice. Add butter.

6Cool and pour into cooked pie shell.

7Cover with meringue.
