Lemon Pie

- 4 eggs, separated
- 1 c. sugar
- 1 Tbsp. flour
- 1 lemon (juice and rind)
- 9-inch baked pie shell
Directions

1Mix 1/2 cup sugar and the flour together.

2Add egg yolks, juice from lemon and grated rind.

3Cook in double boiler until thick.

4Beat egg whites real stiff; add remaining 1/2 cup sugar. Blend approximately 1/3 of the egg whites into yolk mixture.

5Pour into baked pie shell; top with remainder of egg whites.

6Brown in oven at 375°.
