- 1/2 c. cold water
- 7 Tbsp. cornstarch
- 1 1/2 c. hot water
- 1 1/4 c. sugar
- 3 egg yolks, slightly beaten
- 1 lemon, grated rind and juice
- 1 Tbsp. butter
Directions

1Mix cold water and cornstarch to a thin paste.

2Combine hot water with sugar until sugar is dissolved.

3Add cornstarch mixture and bring to boil over medium heat, stirring constantly.

4Stir a small amount into slightly beaten egg yolks.

5Combine with remaining mixture and cook for while longer.

6Add lemon rind and juice and butter; blend well (until butter has melted).

7Pour into baked pie shells.

8Top with meringue.

9Place in 325° oven until meringue is browned.
