Ingredients
- juice of two lemons
- grated rind of 1 lemon
- 2 Tbsp. cornstarch
- 3 eggs, separated
- 1 1/2 c. sugar
- 3 Tbsp. flour
- 1 tsp. butter
- 2 c. boiling water
Directions

1Sift flour, cornstarch and sugar into a saucepan.

2Add butter. Add lemon juice to the egg yolks and beat until they are thick and velvety.

3Add this to the sugar, cornstarch, butter and flour mixture.

4Stir until free of lumps.

5You may add a few tablespoons of cold water to make it thin enough not to lump.

6Pour the boiling water over lemon mixture.

7Set on stove and let come to a boil, stirring constantly.

8And here is the secret: your pie will have a better flavor if it scorches just a tiny bit.

9Add grated lemon rind.

10Let cool, stirring often.
