- 1 1/4 c. sugar
- 6 Tbsp. cornstarch
- 2 c. water
- 1/3 c. lemon juice
- 3 eggs, separated
- 3 Tbsp. butter
- 1 1/2 tsp. lemon extract
- 2 tsp. vinegar
Directions

1Mix sugar and cornstarch in top of double boiler.

2Add water. Combine beaten egg yolks and lemon juice; beat.

3Pour in double boiler.

4Cook until thick, then add vinegar and extract.

5Cool, then pour into pie shell.
