- 1 pastry shell, baked
- 1 c. sugar
- 3 Tbsp. cornstarch
- 2 Tbsp. flour
- 1/4 tsp. salt
- grated rind of 1 lemon
- 2 c. boiling water
- 3 egg yolks
- 6 Tbsp. lemon juice
- 1 Tbsp. butter
- 1 recipe for meringue
Directions

1Mix half the sugar with cornstarch, flour and salt.

2Add lemon rind.

3Add boiling water slowly, stirring constantly.

4Cook in heavy pan or double boiler, continuing to stir until thick and clear.

5Mix remaining sugar with egg yolks and lemon juice; add to first mixture.

6Cook 2 minutes longer until thick and smooth.

7Add butter.

8Cool.
