- 1 crumb or pastry 8-inch pie shell
- 1 can (1 1/3 c.) sweetened condensed milk
- 1/2 c. lemon juice
- 1 tsp. grated lemon rind or 1/4 tsp. lemon extract
- 2 eggs, separated
- 1/4 tsp. cream of tartar, if desired
- 4 Tbsp. sugar
Directions

1Blend together milk, lemon juice, grated lemon rind or lemon extract and egg yolks.

2Pour into chilled crust or cooked pastry shell.

3Add cream of tartar to egg whites.

4Beat until almost stiff enough to peak.

5Put in sugar gradually, beating until stiff but not dry.

6Pile lightly on pie filling.

7Bake in slow oven (325°) until lightly browned, about 15 minutes.

8Cool.
