  • 8 Tbsp. lemon juice
  • 1 1/4 c. sugar
  • 1/4 tsp. salt
  • 6 Tbsp. all-purpose flour or cornstarch
  • 2 Tbsp. butter
  • 3 eggs

Directions

    Mix sugar, salt and flour together; add water.

    Cook until clear in color.

    Add lemon juice, grated rind and butter.

    Add beaten egg yolks and cook 2 to 3 minutes longer.

    Pour into baked pie shell.

    Cover with meringue and bake 15 minutes at 300°.
