- 3 egg yolks
- juice of 1 lemon
- rind of 2 lemons
- 3 Tbsp. hot water
- 1/4 c. sugar
- 1 Tbsp. flour
- pinch of salt
- 1/2 c. sugar
- 3 egg whites
Directions

1Beat egg yolks until light.

2Add lemon juice and grated rind, hot water, 1/4 cup sugar and flour.

3Put flour and salt in sugar. Cook in double boiler until slightly thickened.

4Beat egg whites until stiff.

5Add 1/2 cup sugar; fold into cooked mixture.

6Beat egg whites before cooking custard.

7Put in cooked pie shell and brown at 325°.
