- 6 Tbsp. cornstarch
- 1 1/4 c. sugar
- 1/8 tsp. salt
- 2 c. boiling water
- 3 eggs
- 1/3 c. lemon juice
- 2 Tbsp. grated lemon rind
- 1 Tbsp. butter
- 9-inch baked pie shell
Directions

1Preheat oven to 325°.

2Mix cornstarch, sugar and salt.

3Slowly add boiling water.

4Cook in a double boiler until mixture is thick.

5Separate eggs and beat yolks slightly.
-
6Slowly add hot mixture to egg yolks.

7Add juice and grated rind and butter. Continue cooking and stirring until mixture is thick.

8Cool.

9Pour into a cool baked pie shell.

10Top with meringue and brown.
