- 1 1/2 c. sugar
- 4 Tbsp. cornstarch
- 4 Tbsp. plain flour
- 1 3/4 c. boiling water
- 4 egg yolks, beaten
- 1/2 tsp. salt
- grated rind of 2 lemons
- 1/2 c. lemon juice
Directions

1Mix sugar, flour, cornstarch and salt together.

2Add boiling water while stirring constantly on high heat, until mixture thickens.

3Cook slowly on low heat until thick and add beaten egg yolks.

4Cook 2 minutes longer; add lemon juice and rind.

5Cool. Pour into a baked pie shell; top with meringue.
