  • 3 Tbsp. corn starch
  • 1-1/2 c. sugar
  • 1/3 c. lemon juice
  • 1 Tbsp. lemon rind
  • 3 eggs
  • 1-1/2 c. boiling water
  • 1/8 tsp. salt

Directions

    Mix together cornstarch, sugar and salt. Cream in small amount of lemon juice. Add egg yolks; cream well. Add boiling water and mix well. Cook until thickened, stirring constantly. Pour into baked pie shell. Cover with meringue, bake in 300° oven 15 minutes until lightly browned.
