- 2 c. sugar
- 1 c. butter or margarine, softened (2 sticks)
- 3 eggs
- 3 1/4 c. flour
- 1/2 tsp. baking soda
- 1 c. buttermilk
- 2 Tbsp. grated lemon peel
- 2 Tbsp. lemon juice
- glaze (recipe follows)
Directions

1Heat oven to 325°.

2Grease and flour tube pan (10 x 4-inch). Beat sugar and butter in a large bowl on medium speed until light and fluffy.

3Beat in eggs one at a time.

4Mix flour and baking soda.

5Beat into sugar mixture alternately with buttermilk until well blended.

6Stir in lemon peel and juice.

7Spread in pan.

8Bake 1 hour at 325°.

9Let stand and cool 20 minutes and glaze.
