Lemon Pound Cake

- 2 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 stick butter or 1/2 c. vegetable oil
- 1 c. sugar
- 4 eggs
- 1/2 c. milk
- 1 Tbsp. lemon juice
- 1 Tbsp. grated lemon zest (yellow part of peel)
- confectioners sugar (optional)
Directions

1Preheat oven to 350°.

2Combine flour, baking powder and salt. In a large bowl, cream the butter and sugar.

3Add the eggs, one at a time, beating after each addition.

4Fold in flour mixture, milk, lemon juice and zest, mixing only enough to combine well.

5Pour into an oiled and floured bread pan and bake until done, approximately 1 hour.

6Unmold and dust top with confectioners sugar, if desired.

7Makes 8 servings.
