  • 3/4 cup butter
  • 1 1/4 cup sugar
  • 2 1/4 cup flour, unbleached all-purpose
  • 3/4 cup buttermilk
  • 2 tablespoons lemon zest grated
  • 3 whole eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda

    Cream butter & sugar and then all remaining ingredients.

    Bake in greased loaf pan.

    When cake is cool, you can serve as is or mix the juice of one lemon & 1/2c.
