- 6 medium potatoes
- 2 cups cheddar cheese shredded
- 6 tablespoons margarine divided
- 1 1/2 cups sour cream
- 3 each scallions, spring or green onions chopped
- 1 teaspoon salt
- 1/4 teaspoon red pepper flakes
Directions

1Cook potatoes in skins, cool.

2Peel and shred on a coarse grater.

3Combine cheese and 3 tablespoons margarine in saucepan; heat and stir until cheese is almost melted.

4Remove from heat; blend in sour cream, onion, salt, and pepper.

5Fold in potatoes, and spoon into a greased 2 quart casserole dish.

6Dot with 1 tablespoon margarine.

7Cover and bake at 300F (150C).

8about 25 minutes.
