Lemon Pudding Cake

- 1 1/2 Tbsp. butter
- 3/4 c. sugar
- 1 tsp. grated lemon rind
- 3 egg yolks
- 3 Tbsp. flour
- 1/3 c. lemon juice
- 1 c. milk
- 3 egg whites
- 1/8 tsp. salt
Directions

1Cream butter and sugar; stir in lemon rind and add egg yolks. Beat until well blended.

2Add flour alternately with lemon juice and milk.

3Add salt to egg whites and beat until stiff.

4Fold into mixture.

5Pour batter into buttered baking 9 x 9-inch dish or deep pan.

6Set dish in pan of hot water.

7Bake at 350° for 40 minutes. When done, the cake is a delicate brown and the lemon sauce is on the bottom.
