- 4 egg yolks
- 1/3 c. lemon juice
- 1 tsp. lemon rind (optional)
- 1 Tbsp. melted butter
- 1 1/2 c. sugar
- 1/2 c. sifted plain flour
- 1/2 tsp. salt
- 1 1/2 c. milk
- 4 egg whites
Directions

1Beat and mix well the egg yolks, lemon juice, rind and butter; set aside. Mix sugar, flour and salt. Measure milk. Whip egg whites. Add sugar mixture alternately with the milk. Fold into beaten egg whites. Pour into 8-inch square pan. Place this pan in a pan of water. Bake for 45 minutes in 350° oven. Pudding will be in the bottom of pan. Turn over when served and
