Lemon Raspberry Muffins

Ingredients

  • 2 c. flour
  • 1 c. sugar
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. half and half
  • 1/2 c. oil
  • 1 tsp. lemon extract
  • 2 eggs
  • 1 c. fresh or frozen (don't thaw) raspberries
  • 2 tsp. poppy seed

Directions

    Combine and mix flour, sugar, baking powder and salt.

    Blend well half and half, oil, lemon extract and eggs.

    Add to above mixture.

    Use raspberries or try a different berry minus any liquid.

    Fold berries and poppy seed into mixture.

    Bake at 425° for 18 to 23 minutes or until golden brown.

    Be careful not to overbake.
