Lemon Raspberry Muffins

- 2 c. flour
- 1 c. sugar
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 c. half and half
- 1/2 c. oil
- 1 tsp. lemon extract
- 2 eggs
- 1 c. fresh or frozen (don't thaw) raspberries
- 2 tsp. poppy seed
Directions

1Combine and mix flour, sugar, baking powder and salt.

2Blend well half and half, oil, lemon extract and eggs.

3Add to above mixture.

4Use raspberries or try a different berry minus any liquid.

5Fold berries and poppy seed into mixture.

6Bake at 425° for 18 to 23 minutes or until golden brown.

7Be careful not to overbake.
