- 455 g basmati rice
- 5 tablespoons vegetable oil
- 2 tablespoons mustard seeds
- 6 curry leaves
- 2 lemons, juice and zest of
- 1 bunch fresh cilantro
- salt and pepper
Directions

1Cook rice in boiling water for 10 minutes and drain.

2Heat oil in a small frying pan.

3Add mustard seeds.

4When seeds being to pop add curry leaves and lemon zest, cook for 1 minute.

5Add drained rice, lemon juice and cilantro.

6Serve piping hot with curry.
