- 1 c. sliced celery
- 1 small onion, chopped
- 1/4 c. plus 2 Tbsp. butter or margarine, melted and divided
- 2 1/2 c. water
- 2 tsp. grated lemon rind
- 1/4 c. lemon juice
- 1/4 tsp. dried whole thyme
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 1/4 c. uncooked long grain rice
- 3/4 lb. fresh mushrooms, thinly sliced
Directions

1Saute celery and onions in 3 tablespoons butter in a large skillet.

2Stir in water, lemon rind, lemon juice, thyme, salt and pepper; bring to a boil.

3Add rice.

4Cover, reduce heat and simmer 20 minutes or until rice is tender and liquid is absorbed.

5Saute mushrooms in remaining butter in a small skillet until tender; drain.

6Add mushrooms to rice mixture; stir well.

7Makes 10 servings.
