- 14 cup minced onion
- 1 lemon, zest of
- 2 tablespoons olive oil
- 1 12 cups arborio rice
- 1 -1 12 cup chicken broth
- 2 -4 tablespoons lemon juice
- 12 cup grated parmesan cheese
- salt and pepper
Directions

1Saute onion and lemon zest in oil in large saucepan until onion is tender, 3-4 minutes.

2Add rice; cook over medium heat, stirring constantly, 1-2 minutes.

3Heat chicken broth to juice boiling in large saucepan; reduce heat and keep hot.

4Add broth to rice, 1/2 cup at a time, stirring constantly until broth is absorbed before adding the next 1/2 cup.

5Continue until the rice is al dente and creamy in texture, 20-25 minutes.

6Stir in lemon juice and cheese; season to taste with salt and pepper.
