Lemon Salad

Ingredients

  • 2 small boxes lemon Jell-O
  • 1 large can crushed pineapple, drained (reserve juice)
  • 1 c. hot water
  • 1 c. cold water
  • 8 oz. pkg. cream cheese, room temperature
  • 1 pkg. Dream Whip
  • 1/2 c. milk
  • 1 tsp. vanilla
  • 1 c. pineapple juice
  • 3/4 c. sugar
  • 1 tsp. lemon juice
  • 2 beaten eggs
  • 2 Tbsp. cornstarch

Directions

    Mix Jell-O with hot and cold water.

    Add crushed pineapple. Put in 9 x 13-inch casserole dish and chill until firm.

    Mix cream cheese, Dream Whip, milk and vanilla; whip and spread over Jell-O. Mix the following: pineapple juice, sugar, lemon juice, eggs and cornstarch.

    Cook until thick.

    Cool and spread on top of cheese mixture.
