- 2 Tablespoons Grape Seed Oil
- 2 pounds Salmon Fillets
- 3 Tablespoons Old Bay Seasoning
- 1 Tablespoon Salt
- 2 cups Mustard Sauce
- 1 cup Coconut Milk
- 1 Tablespoon Dill, Divided
- Mashed Potatoes, To Serve

1Preheat oven to 325 degrees F.

2Heat your cast iron skillet on medium high heat and add oil.

3Meanwhile, season salmon with Old Bay and salt.

4Once oil is hot, add salmon and cook flesh side down for 2 minutes.

5Pour mustard sauce and coconut milk into the skillet and mix around.

6Move skillet to oven.

7Cook for 10 minutes.

8Remove from oven and remove salmon from skillet.

9Turn the stove to high.

10Add 2/3 of the dill.

11Reduce mustard sauce by about half.

12Serve salmon on top of mashed potatoes and cover with as much sauce as you like.

13Garnish with remaining dill.
