- 1/2 cup oil
- 1/4 cup lemon juice
- 1 tablespoon grated lemon rind
- 1 teaspoon oregano chopped
- 1 teaspoon thyme chopped
- 24 shrimp heads large tiger, removed, shells intact
- lemon wedges to serve
Directions

1Combine oil, lemon juice, lemon rind and herbs in a bowl. Season to taste. Set aside 1/3 marinade in a separate bowl. Combine shrimp and 2/3 marinade and toss to coat. Cover and refrigerate for 1 hour.

2Preheat a grill on low. Thread shrimp carefully onto metal skewers. Cook for 3-4 minutes each side, brushing frequently with reserved 1/3 marinade. Serve with lemon wedges.
