  • 1/2 cup Condensed milk
  • 100 grams Butter
  • 200 grams Granita biscuits
  • 1 cup Coconut
  • 1 Lemon, rind finely grated
  • 1 Lemon Icing
  • 2 cup Icing sugar
  • 40 grams Butter, softened
  • 1 Lemon, juiced

Directions

    Grease and line 15.5 x 25cm slab tin.

    Place condensed milk and butter in small pan over medium heat.

    Cook, stirring for 4-5 minutes or until butter melts.

    Crush biscuits in food processor until they are fine crumbs.

    Place crumbs, coconut and 2 teaspoons lemon rind in a bowl.

    Add hot butter mixture.

    Stir until well combined.

    Press biscuit mixture into prepared tin.

    Refrigerate for 1.5 hurs or until firm.

    Lemon Icing.

    Place icing sugar, butter and 2.5 tablespoons lemon juice in a bowl.

    Beat with a wooden spoon until smooth.

    Spread icing over slice.

    Refrigerate for futher 30 minutes or until icing has set.
