- 3/4 c. shortening
- 1 1/3 c. brown sugar
- 1/2 tsp. vanilla
- 2 eggs
- 1/2 tsp. shredded lemon peel
- 2 Tbsp. lemon juice
- 1 c. sifted all-purpose flour
- 1 tsp. baking powder
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 c. quick cooking rolled oats
- 1/2 c. chopped walnuts
Directions

1In mixing bowl, cream shortening, brown sugar and vanilla until light and fluffy. Add eggs, lemon peel and juice; beat well. Sift together flour, baking powder and spices; add to creamed mixture. Stir in rolled oats and nuts. Spread in greased 13 x 9 x 2-inch baking pan.

2Bake at 350° for 20 to 25 minutes.
