  • 18 1/4 ounces yellow cake mix or white
  • 2 tablespoons ground ginger
  • 5 teaspoons lemon
  • 1/2 teaspoon ground cinnamon
  • 8 ounces cream cheese softened
  • 4 tablespoons imperial spread
  • 3 cups confectioners sugar
  • 1 teaspoon vanilla extract

    Preheat oven according to cake mix package directions. Grease 13 x 9-inch baking pan; set aside

    Prepare cake mix according to package directions, stirring in ginger, 4 teaspoons lemon peel and cinnamon before baking. Evenly pour batter into prepared pan.

    Bake according to package directions. On wire rack, cool completely.

    Beat cream cheese, Imperial Spread, sugar, vanilla and remaining lemon peel in medium bowl with electric mixer until light and creamy. Frost cake and garnish, if desired, with additional lemon peel.
