Lemon-Spinach Bake

- 16 ounces, weight Fresh Spinach, Finely Chopped
- 1 whole Lemon, Zest And Juice
- 1/2 whole White Onion, Grated
- 1 teaspoon Minced Garlic
- 1 teaspoon Black Pepper
- 1/2 teaspoons Iodized Salt
- 1/4 cups Vegetable Stock Low Sodium
- 1/2 cups Plain Bread Crumbs (or Panko)
- 3 Tablespoons Butter, Melted
Directions

1Preheat oven to 375°F.

2In a large mixing bowl, add chopped spinach, lemon juice and zest, onion, garlic, black pepper and salt. Mix well and transfer into a baking dish. Pour vegetable stock over the top and add bread crumbs evenly across the top. Drizzle melted butter on bread crumbs.

3Bake 12-14 minutes.
