Lemon-Spinach Bake

  • 16 ounces, weight Fresh Spinach, Finely Chopped
  • 1 whole Lemon, Zest And Juice
  • 1/2 whole White Onion, Grated
  • 1 teaspoon Minced Garlic
  • 1 teaspoon Black Pepper
  • 1/2 teaspoons Iodized Salt
  • 1/4 cups Vegetable Stock Low Sodium
  • 1/2 cups Plain Bread Crumbs (or Panko)
  • 3 Tablespoons Butter, Melted

Directions

    Preheat oven to 375°F.

    In a large mixing bowl, add chopped spinach, lemon juice and zest, onion, garlic, black pepper and salt. Mix well and transfer into a baking dish. Pour vegetable stock over the top and add bread crumbs evenly across the top. Drizzle melted butter on bread crumbs.

    Bake 12-14 minutes.
