- 1 c. sugar
- 2 Tbsp. flour
- 1/2 tsp. salt
- grated rind and juice of 1 lemon
- 2 large eggs
- 1 c. milk
- 1 Tbsp. butter, melted
- 1 pie crust for 9-inch pie
Directions

1Mix sugar, flour and salt.

2Grate lemon rind; add to flour mixture.

3Set aside.

4Separate eggs; beat yolks.

5To egg yolks, add lemon juice, milk and melted butter.

6Add liquid mixture to dry mixture; mix well.

7Beat egg whites until stiff; fold into above.

8Prepare favorite crust in 9-inch pan.

9Pour in filling; bake at 350° for 40 to 45 minutes.
