Lemon Sponge Pie

- 3 Tbsp. margarine
- 1 c. sugar
- 3 eggs
- 1 tsp. lemon rind
- 1/4 c. lemon juice
- 1/4 c. flour
- 1 1/2 c. milk
- 1 (9-inch) pastry shell
Directions

1Bake the pie shell in a 425° oven for 5 minutes.

2Remove from oven and cool while preparing filling.

3Lower heat to 325°.

4Cream the margarine with the sugar.

5Beat in the egg yolks, rind, juices, flour and milk.

6Beat the egg whites to soft peaks and fold into the lemon mixture.

7Pour into the partially baked shell and bake at 325° for 55 minutes or until top is firm and golden.

8(Good served warm.)
