  • 1 c. sugar
  • 4 1/2 Tbsp. flour
  • 3 egg yolks
  • 1/3 c. lemon juice
  • 3 Tbsp. melted butter
  • 1 1/2 tsp. grated lemon rind
  • 1 1/2 c. milk
  • 3 egg whites

Directions

    Mix sugar and flour together.

    Add well beaten egg yolks, lemon rind, juice, melted butter and milk.

    Fold in stiffly beaten egg whites.

    Turn into a pastry-lined pan and bake at 450° about 5 minutes.

    Reduce temperature to 325° and bake about 45 minutes longer or until firm.

    Cool before serving.
