- 1 c. sugar
- 4 1/2 Tbsp. flour
- 3 egg yolks
- 1/3 c. lemon juice
- 3 Tbsp. melted butter
- 1 1/2 tsp. grated lemon rind
- 1 1/2 c. milk
- 3 egg whites
Directions

1Mix sugar and flour together.

2Add well beaten egg yolks, lemon rind, juice, melted butter and milk.

3Fold in stiffly beaten egg whites.

4Turn into a pastry-lined pan and bake at 450° about 5 minutes.

5Reduce temperature to 325° and bake about 45 minutes longer or until firm.

6Cool before serving.
