Lemon Sponge Pie

- butter (size of an egg)
- 1 c. white sugar
- 2 egg whites
- juice and rind of 1 lemon
- 2 Tbsp. flour
- 1 c. whole milk
- 2 beaten egg whites (stiff)
Directions

1Grate the rind fine in a bowl.

2Add sugar, flour, egg yolks and butter and mix.

3If hard to mix, add a little lemon juice to soften.

4Add the rest of the lemon juice, then the milk and egg whites.

5Pour into unbaked pie crust and bake at 450° for 10 minutes, then 400° for 25 minutes more.

6Makes 1 pie.
