  • 1 lemon, grated and juice
  • 1 c. sugar
  • 1 Tbsp. butter
  • 2 Tbsp. flour (heaping)
  • 2 eggs (reserve whites)
  • 1 c. milk
  • 1 unbaked pie shell

    Cream sugar and butter.

    Add beaten egg yolks.

    Add flour and mix.

    Add lemon juice, grated rind and milk.

    Fold in stiffly beaten egg whites.

    Pour into unbaked crust.

    Bake at 350° for 40 minutes or until inserted toothpick comes out clean.

    (Pillsbury pie crust works fine.)
