- 3 Tbsp. butter
- 1 c. sugar
- 3 Tbsp. flour
- dash of salt
- 1 unbaked pie shell
- 1 1/4 c. milk
- 4 eggs, separated
- 1/3 c. lemon juice
- grated peel of 2 lemons
Directions

1Cream butter and sugar until fluffy.

2Beat in flour, egg yolks, lemon peel and juice, and milk.

3Beat egg whites until stiff, fold into first mixture.

4Pour into pie shell and bake in preheated oven.

5Bake at 375° for 15 minutes.

6Reduce heat to 300° and bake 45 minutes until golden or until toothpick inserted in center comes out clean.
