  • 9 eggs, separated
  • rind and juice of 3 lemons or bottled juice to make 1 c.
  • 3 c. sugar
  • 1 c. flour
  • 3/8 tsp. salt
  • 3 Tbsp. melted butter
  • 3 3/4 c. milk (do not heat milk)

Directions

    Beat egg yolks; add lemon juice and rind.

    Mix sugar, flour and salt to lemon mixture.

    Stir in butter, then milk.

    Fold in beaten egg whites.

    Bake at 350° for 10 minutes, then at 300° for 20 minutes or until filling is firm.
