- 9 eggs, separated
- rind and juice of 3 lemons or bottled juice to make 1 c.
- 3 c. sugar
- 1 c. flour
- 3/8 tsp. salt
- 3 Tbsp. melted butter
- 3 3/4 c. milk (do not heat milk)
Directions

1Beat egg yolks; add lemon juice and rind.

2Mix sugar, flour and salt to lemon mixture.

3Stir in butter, then milk.

4Fold in beaten egg whites.

5Bake at 350° for 10 minutes, then at 300° for 20 minutes or until filling is firm.
