- 1 c. sugar
- 2 Tbsp. flour
- butter (size of an egg), softened
- 3 egg yolks
- 3 egg whites
- 1/2 tsp. salt
- 1 c. milk
- juice and rind of 1 lemon
Directions

1Beat until creamy the sugar, flour, butter, egg yolks and salt.

2Add lemon juice and rind and milk.

3Whip well.

4Beat egg whites until stiff and fold into the lemon mixture.

5Pour into an unbaked pie shell.

6Bake at 325° for about 40 minutes.
