  • 1 c. sifted flour
  • 1/2 c. butter (room temperature)
  • 1 c. confectioners sugar
  • 2 eggs, well beaten
  • 1 Tbsp. flour
  • 2 Tbsp. lemon juice
  • 1 c. sugar
  • 1 tsp. baking powder
  • 1 tsp. grated lemon rind

Directions

    Work first 3 ingredients like pastry and press mixture into the bottom of an 8-inch square pan and bake 20 minutes at 350°. While this is baking, combine the next 6 ingredients.

    Pour lemon mixture on top of baked pastry and return to oven for 20 to 25 minutes.

    The shorter time will give a soft, moist result, the longer time a drier, crispier square.
