- 1 c. all-purpose or whole wheat flour
- 1/2 c. margarine or butter, softened
- 1/4 c. powdered sugar
- 1 c. granulated sugar
- 2 eggs
- 2 tsp. grated lemon peel (if desired)
- 2 Tbsp. lemon juice
- 1/2 tsp. baking powder
- 1/4 tsp. salt
Directions

1Heat oven to 350°.

2Mix flour, margarine and powdered sugar. Press in ungreased baking pan, 8 x 8 x 2-inch, building up 1/2-inch edges.

3Bake 20 minutes.

4Beat remaining ingredients until light and fluffy, about 3 minutes.

5Pour over baked layer. Bake until no indentation remains when touched in center, about 25 minutes.

6Cool.

7Cut into 1-inch squares.

8Makes 4 dozen squares.
