- 125 g butter, room temperature
- 40 g icing sugar
- 150 g flour
- 4 eggs
- 220 g granulated sugar
- 35 g flour
- 1 teaspoon lemon zest
- 125 ml fresh lemon juice
Directions

1Preheat oven to 180 C (350F).

2Grease 23cm (9inch) square cake pan; line base and sides of pan with baking paper.

3For crust beat butter and icing sugar in a bowl with electric mixer until smooth add flour mix until combine.

4Press mixture over base of prepared pan.

5Bake for about 15 - 20 minutes until lightly golden.

6For filling whisk eggs, sugar, flour, lemon zest and lemon juice until combined.

7Pour over hot base.

8Bake for about 20 minutes or until firm.

9Cool in pan on wire rack.

10Cut into small squares and dust with icing sugar just before serving.
