  • 1 cup butter
  • 12 cup icing sugar
  • 2 cups flour
  • 3 large eggs
  • 2 cups sugar
  • 5 tablespoons flour
  • 6 tablespoons fresh lemon juice
  • 2 tablespoons lemon zest
  • icing sugar

Directions

    BASE: Mix with pastry blender.

    Pat firmly into 13x9-inch baking pan and bake at 350F for 20 minutes.

    FILLING: Mix together eggs, sugar, flour, lemon juice and lemon zest.

    Spread on base.

    Bake 20-25 minutes.

    Cool completely.

    Cut into squares.

    Top with icing sugar while still warm.

    Place back inside the turned-off oven with door open for 2-3 minutes more.
